Energy Muffins (tasty, low fat, dairy free)

These are very tasty and freeze well.
  • 375g Gluten Free Goodies Cake and Biscuit mix
  • 4 tsp Gluten Free Goodies Baking Powder
  • 3 eggs, lightly beaten
  • ¼ cup cooking oil
  • 1 ¼ cups water
  • ½ cup grated carrot
  • ½ cup sultanas
  • 2 tbsp desiccated coconut
  • ¾ cup raw or light brown sugar
  • 1 tsp mixed spice

Preheat oven to 210C and oil a muffin tray. Don’t use paper muffin tin liners – the mix sticks to them! They come out of oiled tins perfectly happily.

Stir all ingredients together to mix.

Spoon into muffin tins and bake 15 to 20 minutes until well-risen and golden brown.  

Cool on a wire rack.
