Doughnuts to die for

I recently acquired a doughnut maker – a weird little electrical implement that looks vaguely like a hedgehog or some other small innocuous animal. And I have discovered that I can make real mini-doughnuts, with holes, that taste really, really nice! They freeze well, if there are any left…. 

  • 1½ cups Gluten Free Goodies Company Pikelet and Waffle mix
  • 2 tsp Gluten Free Goodies Company baking powder
  • ½ cup sugar
  • 125g butter, softened
  • 2 size 7 eggs
  • ¾ to 1 cup milk


In a large bowl, mix the Pikelet and Waffle mix, baking powder and sugar.

Add the softened butter, eggs and milk and beat, preferably with a hand-held electric mixer, until the mixture is smooth and creamy.

Preheat the doughnut maker for 4 to 5 minutes. Using a dessertspoon, fill each cavity about half full.

Close the lid and cook for about two minutes or until the doughnuts are golden brown and soft to the touch.

Carefully remove to a wire rack and repeat the procedure.

Brush the hot doughnuts with a small amount of melted butter, then roll them in cinnamon-sugar mix (about 1 to 2 tsp cinnamon to 1/2 cup of sugar).

Eat immediately, or freeze the leftovers. They can be microwaved or put in the oven briefly to thaw them when wanted.
