Gingerbread Pancakes
These sound a bit weird but I like the taste. I can only suggest you try them and see what you think! They are particularly nice with tangy apple syrup, or with maple syrup.
- 2 cups Gluten Free Goodies Pikelet and Waffle mix
- 50g melted butter
- 4 eggs
- 1 ½ to 2 ½ cups milk, depending how thick you like your pancakes!
- 4 tsp Gluten Free Goodies baking powder
- 4 tbsp brown sugar
- 1 tsp instant coffee
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground cloves
- ½ tsp ground nutmeg
Beat eggs and sugar until thick and creamy.
Add flour, baking powder, baking soda, coffee and spices and mix well with milk until a suitable consistency is reached.
If the mix thickens on standing, add a little more milk as you go along.
Cook in a non-stick frying pan and store in a warm oven while completing the batch.
These can also be made as pikelets by keeping the mix a little thicker.
