Banana Bread #2

This is ideal for using up the contents of the fruit bowl just before the rot really sets in or the fruit flies carry it away. It can be very easily doubled, as well.

 
  • 3 very ripe bananas
  • 75g butter, melted
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 ½ cups flour


Preheat the oven to 180C.

Mash the bananas, and stir in the melted butter, suagr, eggs and vanilla.

Sprinkle the baking soda over the mix and stir in thoroughly. Add the flour last and mix.

Pour the mix into a buttered and paper-lined 10 x 20cm loaf tin. Bake for approx 1 hour, until a skewer inserted into the loaf comes out clean.
