These are incredibly simple to make, taste magnificent and are guaranteed to impress…. Expensive because of the ground almonds but you can’t have everything!

 
  • 2 cups ground almonds
  • 1 cup caster sugar
  • 3 egg whites
  • ½ tsp vanilla, preferably the real extract rather than the artificial stuff, please! 



 
Preheat the oven to 170C. Cover two baking trays with baking paper – vital, otherwise the biscuits stick to the trays!


Mix together the ground almonds and the sugar.

Beat the egg whites and vanilla together until frothy but not stiff.

Add egg white mix to the almond mix, and combine thoroughly. The mix will stick together, truly!

Using a teaspoon, place small mounds of the dough onto the lined trays, leaving spreading room. You need at least a couple of cm between biscuits.

Bake for 25 to 30 minutes, until a light golden colour.

Turn off the oven and leave the biscuits undisturbed for an hour or so.

Remove from trays and store in a dry, airtight tin or jar. They should be crisp right through and will keep well.
