Banana Coconut Bread

This is a very tasty, low-sugar loaf – great for afternoon tea!

 
  • ¼ cup sugar
  • 125g melted butter
  • 2 beaten eggs
  • 1 tsp vanilla extract
  • 3 ripe bananas, mashed
  • 1 cup (160g) Gluten Free Goodies Company Cake and Biscuit mix (either light or rich will do fine)
  • 2 tsp Gluten Free Goodies Company baking powder
  • 1 cup desiccated coconut
  • 1/8 tsp nutmeg
  • ½ tsp cinnamon


Preheat oven to 180C

Grease and flour a loaf tin

Place butter, eggs, vanilla and bananas in a bowl and whisk to combine

Put all dry ingredients into another bowl, then add the wet mix and combine thoroughly.

Transfer to the loaf tin.

Bake for about 60 minutes or until a skewer comes out clean.

Cool in the tin for ten minutes before removing to a wire rack.

Serve sliced, with butter and lemon honey. Yum!
