Peanut Brownies

These are lovely, light, crunchy peanut brownies – nicer than the wheat version in my opinion! They are best made with dry-roasted peanuts. Buy blanched raw peanuts from the supermarket and you can very quickly roast them in the microwave. Spread them out on a glass dish in a thin layer and heat on high, starting with a couple of minutes and gradually reducing the cooking time in subsequent rounds, stirring after each cooking period, until they have reached a nice shade of golden brown. Allow to cool before use.

 
  • 1 egg
  • 120g butter
  • ¾ cup sugar
  • 240g(1 ½ cups) Gluten Free Goodies Cake and Biscuit mix
  • 1 tsp Gluten Free Goodies baking powder
  • 4 tbsp cocoa
  • 1 cup dry-roasted peanuts (see above)


Cream butter and sugar, then add egg and beat well.

Add flour, baking powder and cocoa and mix to a dough.

Add peanuts and mix in well (use hands!)

Roll into balls, flatten and bake at 180C for 20-30 minutes until firm to the touch.

Remove to a wire rack to cool.
