Tollhouse Cookies

My chocoholic kids say these are particularly good!

 
  • ½ cup brown sugar
  • ½ cup castor or plain white sugar
  • 2 eggs
  • 150g butter
  • 2 ½ cups (400g) Gluten Free Goodies Cake and Biscuit mix
  • 1 tsp Gluten Free Goodies baking powder
  • ½ large block dark chocolate (a 250g block) chopped into smallish lumps
  • 1 tsp vanilla 
     



Cream sugars, butter and vanilla together until light and fluffy.

Add eggs one at a time and mix well.

Add flour and baking powder and mix well.

Add chocolate and blend in.

Allow to stand for a few minutes to absorb moisture and firm up a little.

Roll into balls and flatten between palms. Place on oven trays allowing spreading room.

Bake at 180C for 25 – 35 minutes depending on your oven, until golden brown and firm to the touch.

Cool on a wire rack. Makes about 25
