Tollhouse Cookies
My chocoholic kids say these are particularly good!
- ½ cup brown sugar
- ½ cup castor or plain white sugar
- 2 eggs
- 150g butter
- 2 ½ cups (400g) Gluten Free Goodies Cake and Biscuit mix
- 1 tsp Gluten Free Goodies baking powder
- ½ large block dark chocolate (a 250g block) chopped into smallish lumps
- 1 tsp vanilla
Cream sugars, butter and vanilla together until light and fluffy.
Add eggs one at a time and mix well.
Add flour and baking powder and mix well.
Add chocolate and blend in.
Allow to stand for a few minutes to absorb moisture and firm up a little.
Roll into balls and flatten between palms. Place on oven trays allowing spreading room.
Bake at 180C for 25 – 35 minutes depending on your oven, until golden brown and firm to the touch.
Cool on a wire rack. Makes about 25
