Crunchy Coconut Crisps

These are very simple to make and I love them. So does my husband, who reckons they are the closest gluten free approach to Krispie biscuits. Lovely with a cup of tea! 



  • 1 cup (160g) Gluten Free Goodies Cake and Biscuit mix
  • ½ cup sugar
  • 1 egg
  • 1 tsp Gluten Free Goodies baking powder
  • 80g butter
  • 1 cup medium (not fine) coconut


Mix flour, baking powder and sugar together.

Rub butter in to create a crumb mix.

Add coconut and mix well.

Mix in egg to form a soft dough.

Roll into balls and flatten between the palms of your hands, or alternatively, roll out and cut with a cookie cutter.

Bake for 20 to 25 minutes at 180C until golden brown Remove to rack to cool and crisp up. They should go crunchy right through on cooling.
