These are delicious little cakes, traditionally made with ground almonds anyway, so they adapt very readily to gluten free cooking
  • 1 ½ cups gluten free icing sugar
  • 1 ½ cups (240g) Gluten Free Goodies Rich Cake and Biscuit mix
  • 5 egg whites, beaten to a froth
  • 125g melted butter


Mix flour and icing sugar together, then mix in the melted butter and beaten egg whites.

Place in lightly greased muffin tins (or friend moulds if you have such things)

Bake at 210C for 15 – 20 minutes until lightly browned and cracking slightly on top.

Cool in the tins for 5 minutes before removing to a wire rack.

Serve dusted with icing sugar.

 

These are best eaten on the day of making. The basic recipe can be varied in many ways – some of the simplest are: sprinkle a few blueberries on top before cooking; add orange rind to the mix and glaze the cooked friends with melted marmalade rather than dusting with icing sugar.
