Pancakes
The Pikelet recipe can also be used to make pancakes. Just thin the basic mix as desired with milk or water to give a thin, pouring consistency, and cook as usual. If you want to, you can thin it down lots to make really wafer-thin ones.
For a delicious quick savoury meal, roll a thin pancake around any tasty treat (ham-and-cheese, heat-and-eat tuna, spicy vegetable mix etc)! If you like them crunchy, put them in the oven in a baking dish after filling, and bake for a few minutes.
