Gluten Free Cake and Biscuit recipes Before you start:
These recipes have been developed using a conventional gas oven. If you have a fan-bake or fan-forced oven, you may need to reduce temperatures or cooking times or both.
Flour measures:
If you don’t have scales, please note that one lightly packed cup of baking mix weighs 160g. (Fill the cup, then bang it gently on the bench once or twice).
Lite Cake and Biscuit mix:
If you are using this in place of our regular Rich mix, use the same quantity of flour. You may find that some recipes need slightly more liquid (eg 1-2 Tbsp) if the mix seems too dry. The Lite mix will produce lighter and fluffier cakes and crunchier biscuits than the Rich mix. For fruit cakes, friands and steamed puddings the Rich mix will give better results.
