Feedback from our customers eating a gluten-free diet
I developed nasty digestive problems after my second child was born, and after two or three years was told I probably had irritable bowel syndrome, a common diagnosis for many people but not one which offered a lot of practical help.
Around that time a friend, who was already diagnosed as coeliac, suggested I might like to try a gluten free diet for a while and see what happened. After just a few days I felt a great deal better, and decided that this was worth pursuing.
My main problem was that I then proceeded to spend a fortune buying interesting ingredients and trying out assorted recipes, most of which went directly into the rubbish bin. Some of them were rejected outright by our usually voracious local sparrows!
Being fond of my food, I decided that something had to be done about this fairly rapidly, and I began experimenting with a range of flour mixes of my own. The products now offered as The Gluten Free Goodies Company range of flours are the result of that experimentation. I found that there isn't, in my opinion, an all-purpose gluten-free flour.
Traditional "baking" needs a different mix to that which works for bread, or pancakes. I then proceeded to adapt and in some cases, design from scratch, the recipes presented on this website.
I continue to keep a sharp eye out for recipes which can be adapted to gluten-free eating, and have had some surprising successes over the years - like discovering that you can make very nice doughnuts, and really good Christmas cakes, among other things that might not at first seem very likely.
Over the years since the Gluten Free Goodies Company was launched, the greatest pleasures have been receiving phone calls and emails from people who have told me how much they enjoy being able to eat nice, tasty food again.
This is often particularly the case for parents of young children, who just love to be able to have a "real" birthday cake that all their friends can enjoy too, or to have little treats like biscuits in their lunchbox that taste like the ones they used to be able to eat.
Taking the fear and worry out of trying to adapt to a gluten-free lifestyle is something that I have really enjoyed being involved in, and I look forward to continuing to add to the collection of recipes that can be enjoyed by coeliacs and their friends and family alike.
