Coeliac Disease and Food Additives (with special attention to the "modified starches" 1400-1450). For NZ-sourced foods, additives 1401-1450 are probably not wheat-based, but 1400 probably is. In European-sourced foods the same additive numbers may be derived from different sources including wheat. Properly this should be declared on the label, but.... Confused? This link gives more info, thanks to Alannah Steeper at the Manufactured Foods Database.

1 in 100 children may have subclinical coeliac disease, but few have a gluten-free diet - British Medical Journal Feb 2004 (for full article click here). The incidence in 7-year-olds is about the same as in adults, suggesting that the disorder starts in childhood (though the cause is still unknown). Symptoms were only moderately different from children that tested negative (eg 50% of positive-test children reported incidents of diarrhoea, compared with 34% of negative-test children), and very few had consulted a doctor. The strongest symptom was reduced height and weight, equivalent to 9 months behind "normal" children.

Coeliac disease (more common than thought) - British Medical Journal
This article describes a recent survey that showed that gluten antibodies are present in many people who have NO gut symptoms.

"Studies show coeliac disease to be a common disorder, possibly affecting 1 in 200 of the general population, the majority of patients being diagnosed in adulthood. Many patients have minimal symptoms, and gastrointestinal symptoms are frequently absent.
Coeliac disease should be considered in a wide range of clinical situations including anaemia or osteoporosis and in patients with a range of associated disorders such as type 1 diabetes.
Treatment consists of permanent withdrawal of gluten from the diet, which results in complete remission."

Gluten Sensitivity - the many-headed hydra - British Medical Journal
This recent article says that gluten allergy can express itself in the brain, peripheral nerves or skin with "histologically normal mucosa on biopsy and few or no gastrointestinal symptoms"
